Easy Weetbix Fruit Loaf

You know how you always get crushed, left over weetbix at the end of the packet that always get left? Well I use those crumbs for this recipe.My boys, aged 12 and 14 years, have got to the stage of their lives where they are constantly hungry! This is a great recipe to make to fill them up. It's great for school lunches or after school. The only problem is that it never lasts long!
 

Weetbix Fruit Loaf


You will need:
3 Weetbix
1 1/2 cups of milk
3/4 cup of castor sugar (or you can use less sugar and a pinch of natural stevia)
1 1/2 cups self raising flour
1 1/2 cups fruit - like sultanas or chopped dates etc.

Method:
Crush the weetbix into a bowl, add sugar, fruit and milk.
Mix these ingredients up and leave overnight or for approximately a day covered up.
The next morning add the flour and mix well. If the mixture is dry just add a little more milk.
Line a loaf tin and then bake for 1 hour at 180°c.

This recipe has never failed for me.
